This chicken is perfect for meal prep Sunday’s or a weeknight dinner. It is easy, delicious, low carb, and more than likely you already have the ingredients in your home; which is something I look forward to!

Here are the ingredients you will need to prep 6 bone-in chicken thighs (Serves 6. If you are prepping less, use less seasoning and cheese)


- 1 cup shredded mozzarella and parmesan cheese
- 1-1/2 teaspoon dried oregano
- 2 tablespoons dried crushed basil leaves or ( you can opt for fresh basil leaves finely chopped 1/4 cup)
- 1-1/2 teaspoon onion powder
- black pepper (to taste)
- 2-1/2 tablespoons butter (melted)
- 6 thighs (bone-in, skin removed, keep minimal fat)
Optional
- red pepper flakes (to taste)
Directions
Step 1
Preheat the oven 375F.
Step 2
Mix together the cheese, herbs, onion powder and black peppers.

Step 3
Place butter on a safe microwaveable plate ( 40 seconds). Dip chicken thigh, front and back in butter and cover with cheese mixture and place in a baking dish. Repeat with remaining chicken thighs. Press any remaining cheese/mixture on top of chicken.


Step 4
Add pinch of pepper flakes on each chicken (optional)
Step 5
Bake for 45 minutes or until chicken has reached the internal temperature of 165F. For the last 5-10 minutes cover with foil to retain moisture.


Great sides to pair this with this are asparagus and mashed cauliflower. If you are following a low-carb or keto diet then you are very familiar with cauliflower being the GOAT (greatest of all time) for recipes. It is also quite a booger to shred (rice); so I discovered a great alternative that is located in the freezer isle! Yes, I said freezer isle. I have discovered riced cauliflower and the latest, mashed cauliflower at Wal-mart (the people’s champ) 😉
