I created this smacking fried rice using cauliflower and jasmine rice. I made a batch using jasmine rice for my husband, but he had the honor of trying both, and he said it was some of the best fried rice he’s ever had!
This meal is perfect any day of the week, and it is excellent if you have company over. Show them your skills in the kitchen. Have fun!

Serves 4
Ingredients:
- 12 Jumbo Raw Shrimp
- Three Lobster Tails (cooked and chopped)
- 2 cups of Cauliflower rice or White jasmine rice (cooked) ( I used two bags of 12 oz Itella Riced Cauliflower from SamsClub) After you cook rice place in the refrigerator.
- 2 cups of Red, Green and Yellow bell pepper mixed
- 2 cups of Red onion, Yellow onion and Shallot mixed
- 1 bunch of green onions
- 1 tablespoon Braggs Liquid Aminos (Soy Sauce replacement)
- 1 tablespoon Oyster Sauce
- 2 eggs
- 1 cup sweet corn
- 1 cup chopped carrots
- 2 tablespoons extra virgin oil or spray
Seasonings:
- Goya Adobo All purpose seasoning
- Slap YA MAMA Cajun Seasoning
- Vegetable Seasoning or create my mixture: You will have some left over: 1 tablespoon basil, 1 teaspoon garlic powder, 1/4 teaspoon sea salt, 1 teaspoon dried minced onion, 1 teaspoon oregano and 1 tablespoon Adobo All purpose seasoning
Instructions:
- Season shrimp with 1/2 teaspoon of vegetable seasoning or mixture. Add 1/2 teaspoon of Slap Ya Mama Cajun Seasoning. Allow to marinate for at least ten minutes
- Add tablespoon of extra olive oil or spray to pan. Lightly cook eggs for 1-2 minutes so they are not overcooked, light yellow and fluffy/runny. Remove and set to the side.
- Add tablespoon of extra virgin olive oil or spray to pan, saute onions on low-medium heat until they are translucent.
- Add carrots, cover for 1-2 minutes.
- Add bell peppers and corn
- Season with a 1/2 teaspoon of vegetable seasoning or mixture and 1/4 teaspoon of Adobo all purpose seasoning (taste for flavor preference)
- Cover for five minutes.
- Push vegetables to the side of pan and add shrimp. Cook shrimp 1-2 minutes. Be sure to flip and not to over cook. Typically when the shrimp is light pink and creates a C shape they are done.
- Remove shrimp and set to the side.
- Stir vegetables, add cooked lobster and mix well.
- Add cooked rice
- Add 1 tablespoon liquid aminos and 1 tablespoon of oyster sauce.
- Mix in eggs, shrimp and chopped green onions.
- Stir and serve!
