Reduced Calorie Cheesecake ft. Jell-O pudding mix

I was craving something sweet, and if you are a friend of mine, then you know I love cheesecake, especially from Pappadeaux’s Seafood Kitchen! This cheesecake is no Philadelphia cheesecake, but it sure is delicious! Light, airy texture. Great if you have a low-sugar lifestyle and want to watch your calories.

One slice is a serving

Ingredients

  • 1 box of Jello cheesecake reduced calorie instant pudding & pie filling
  • 3 eggs
  • 1 tbsp all natural pure vanilla extract or you could use 1 tbsp of lemon juice.
  • 1/2 teaspoon lemon juice
  • 3 tbsp stevia
  • 3 cups of Fage Total 0% Nonfat Greek strained yogurt plain ( you could also use 2%).
  • 1 cup of berries (optional for garnish)
  • 1-2 tbsp Reddi wip (optional for garnish)

Instructions

  1. Preheat oven to 350 degrees
  2. In a medium sized mixing bowl, add eggs, vanilla, lemon juice, and stevia until blended well.
  3. Add in yogurt and box of pudding until well combined
  4. Spray a pie dish or 7-inch spring form pan with non-stick cooking spray or parchment paper and pour ingredients.
  5. Bake for 30 minutes
  6. Let cool for 15-20 minutes before covering with plastic wrap
  7. Chill overnight in the refrigerator
  8. Garnish with your favorite berries and spray with whip cream. Enjoy!

To make cheesecake syrup

  1. Add favorite berries to microwave safe bowl
  2. Add tbsp of stevia
  3. heat in microwave for a minute to a minute and a half
  4. Drizzle on cheesecake!

A traditional New York style cheesecake is 540 calories and a cheesecake prepared this way is only 124 calories!
