
I was craving something sweet, and if you are a friend of mine, then you know I love cheesecake, especially from Pappadeaux’s Seafood Kitchen! This cheesecake is no Philadelphia cheesecake, but it sure is delicious! Light, airy texture. Great if you have a low-sugar lifestyle and want to watch your calories.
One slice is a serving
Ingredients
- 1 box of Jello cheesecake reduced calorie instant pudding & pie filling
- 3 eggs
- 1 tbsp all natural pure vanilla extract or you could use 1 tbsp of lemon juice.
- 1/2 teaspoon lemon juice
- 3 tbsp stevia
- 3 cups of Fage Total 0% Nonfat Greek strained yogurt plain ( you could also use 2%).
- 1 cup of berries (optional for garnish)
- 1-2 tbsp Reddi wip (optional for garnish)
Instructions
- Preheat oven to 350 degrees
- In a medium sized mixing bowl, add eggs, vanilla, lemon juice, and stevia until blended well.
- Add in yogurt and box of pudding until well combined
- Spray a pie dish or 7-inch spring form pan with non-stick cooking spray or parchment paper and pour ingredients.
- Bake for 30 minutes
- Let cool for 15-20 minutes before covering with plastic wrap
- Chill overnight in the refrigerator
- Garnish with your favorite berries and spray with whip cream. Enjoy!
To make cheesecake syrup
- Add favorite berries to microwave safe bowl
- Add tbsp of stevia
- heat in microwave for a minute to a minute and a half
- Drizzle on cheesecake!
A traditional New York style cheesecake is 540 calories and a cheesecake prepared this way is only 124 calories!
