Five-Spice Chicken Stew

I had baby carrots and broccoli in the fridge about to go bad. My first thought…Chinese cuisine anyone?? This is one of my go to dishes when I do not feel like cooking. Haven’t we all been there? Slow cookers/crock pots are life savers. Simply place all ingredients in your slow cooker on low or high heat and go on about your day. This dish is perfect if you are busy but want to have a tasty, hot dish for you and your family at the end of the day. I use chicken breast in this dish, but you could easily substitute the chicken breast for lean pork.

On the next day, I decided to have this with Brussels sprouts instead of broccoli and it was tasty!

Serves 6 serving is about 1 cup

Ingredients

  • 1-1/2 lb lean boneless skinless chicken breast (cut into 1-1/2 inch chunks) or lean pork
  • 2 cups uncooked broccoli (fresh or frozen)
  • 1 cup uncooked matchstick-cut carrots
  • 1 small uncooked matchstick-cut red bell pepper
  • 1/4 cup uncooked matchstick-cut sweet red pepper
  • 2 tbsp minced garlic or 6 garlic cloves, minced
  • 1/4 cup Hoisin Sauce
  • 1 tbsp Sesame seed oil
  • 1 tsp Five-spice powder
  • 2 tbsp Liquid Aminos
  • 2-1/2 cup chicken stock/broth
  • 1-1/2 tbsp corn starch
  • 1-1/2 tbsp Ground ginger ( if you like ginger you can up to 2 tbsp)
  • crushed pepper flakes ( add to your desire of heat)
  • 2 tsp toasted sesame seeds (optional for garnish)
  • Cooked brown or white long-grain rice (optional base for stew)

Instructions

  1. in a 5- or 6-qt cooker, combine chicken, carrots, ginger, garlic, five-spice powder and crushed pepper flakes. In a large glass measure, whisk together broth, hoisin sauce and sesame oil. Pour over chicken and carrots. Cover and cook until chicken is fork-tender, 3.5 to 4 hours on high or 5 to 5.5 hours on low.
  2. With slotted spoon transfer chicken and carrots to a medium bowl; cover to keep warm.
  3. In a small bowl, whisk together liquid aminos and cornstarch until smooth. Whisk into slow cooker. Cover and cook until mixture simmers, 7-10 minutes on high. Stir in broccoli and peppers. Cover and cook until vegetables are tender, about 40-45 minutes. Return chicken to slow cooker and cook until heated through, about 10 minutes more.
  4. Sprinkle sesame seeds
  5. Serve with cooked brown or white long-grained rice to and drizzle the broth from the slow cooker over the rice. Enjoy!
