
I’ve been wanting to try jackfruit as a meat substitute, and what better day than Taco Tuesday! I am glad I did because it is delicious. My mind is literally blown! This meal will be a new kitchen staple. Jackfruit is healthy and has a meat like consistency so you can’t lose; give it a try if you haven’t already.
Serves 2-3
Ingredients
- Unsweetened jackfruit (I used a can of Native Forest organic young jackfruit original. Be sure not to get sweet!)
- 1 tsp taco seasoning
- 1/4 tsp cumin
- 1/2 tsp black pepper
- 1 tsp nutritional yeast
- 1/4 cup onion
- 1/2 tsp minced garlic
- 1/4 tsp crushed peppers
- 1 tbsp Jalapeno juice (optional)
- olive oil spray
- Corn tortillas
- Garnishing:
- Lime juice
- Cilantro
- Salsa
- Sour cream or plain greek yogurt
- Jalapenos
Instructions
- Shred jackfruit
- Place 1/4 cup olive oil in skillet over medium heat
- Add shredded jackfruit and mix well with the oil for 8 minutes (so it is crispy, not fried)
- reduce heat add onions and minced garlic
- Add seasonings except nutritional yeast and mix well
- You want the onion to be translucent, you don’t want to brown the onion or garlic or it will taste bitter 😦
- Add nutritional yeast to give it a meaty like flavor, and jalapeno juice. Mix well and remove from heat
- Place tortillas in oven or skillet depending how you like your tortillas.
- Add carnitas on tortillas
- Add cilantro, lime juice, yogurt and salsa. You can add any of your favorite toppings.
