Green Pineapple Delight Smoothie

I know, I know I have been gone for a long minute. Lately, I’ve been busy enjoying my family, taking care of my well-being, and focused on work, school, and other business ventures. I have to remind myself that I am one person, and life is not a race, and to treat it like a stroll through the park. Currently, I am enrolled in two courses this summer, Healthcare Data Analyics and Fundamentals of Anatomy and Physiology. I will keep going until I complete this program ( no more breaks). It is hard going back to school when it seems I’ve been in school all of my life. After I obtained my Master’s Degree in 2013, I knew I was done with school forever (in my “Squints” tone: The Sandlot), but the reality is you’ll never be done with higher learning and growing professionally.

Before I started reading, I wanted to enjoy a healthy and delicious smoothie.

I discovered a blender hack while using a mason jar instead of the blender glass. Makes for simple clean up!

Ingredients/kitchen items:

  • 1 cup pineapple
  • 1 banana
  • 1 small apple
  • 2 cups spinach ( or your choice of leafy green)
  • 1 tbsp. chia seeds
  • 1 tbsp. Greek yogurt ( 0% Fage, optional)
  • 1/2 – 1 cup water
  • Ice (optional)
  • Blender blade and your choice of mason jar. When choosing a mason jar be sure to choose one large enough to fit your smoothie ingredients.

Instructions:

  1. Place spinach in the mason jar, push spinach towards the bottom of the glass if need be.
  2. Add water
  3. Place and twist the blender blade on top of the mason jar
  4. Place on blender and blend until you no longer see leaves
  5. Remove the blender blade and add the other ingredients, and repeat step 3.
  6. Add a straw and enjoy!
